Semolina produced by grinding durum wheat is yellow in color, due to the presence of natural pigments. It is used for the production of low-moisture, i.e. dry products, e.g. pasta, couscous. In the bakery and confectionery market, two types of semolina are used, fine and coarse. Fine semolina is used for the preparation of products such as ravani, creams, milk cake, homemade pasta, melomakarona, and semolina bread.
